Bubur Ayam

Indonesian chicken congee topped with crispy shallots, peanuts, and soy sauce.

Ingredients

  • 1 cup rice
  • 6 cups chicken stock
  • 200g shredded cooked chicken
  • 2 tbsp crispy fried shallots
  • 2 tbsp fried peanuts
  • Sweet soy sauce (kecap manis)
  • Scallions and crackers

Steps

  1. Simmer rice in stock, stirring occasionally, until very soft and porridge-like.
  2. Ladle the congee into bowls.
  3. Top with shredded chicken, crispy shallots, and fried peanuts.
  4. Drizzle with sweet soy sauce.
  5. Garnish with scallions and crackers before serving.
