Ca Kho To

Vietnamese clay pot braised fish in a deep caramel and fish sauce glaze.

Ingredients

  • 4 fish steaks (catfish or similar)
  • 3 tbsp sugar, caramelized
  • 3 tbsp fish sauce
  • 1 shallot, sliced
  • Black pepper
  • Chili, sliced
  • Coconut water or water

Steps

  1. Caramelize sugar in a clay pot or heavy pot until deep amber.
  2. Add fish sauce and a splash of water to form a glaze, then add shallot.
  3. Place fish steaks in the pot and spoon glaze over them.
  4. Add coconut water to partially cover and simmer gently until the fish is tender and sauce thickens.
  5. Garnish with black pepper and chili before serving with rice.
