Ca Kho To
Vietnamese clay pot braised fish in a deep caramel and fish sauce glaze.
Ingredients
- 4 fish steaks (catfish or similar)
- 3 tbsp sugar, caramelized
- 3 tbsp fish sauce
- 1 shallot, sliced
- Black pepper
- Chili, sliced
- Coconut water or water
Steps
- Caramelize sugar in a clay pot or heavy pot until deep amber.
- Add fish sauce and a splash of water to form a glaze, then add shallot.
- Place fish steaks in the pot and spoon glaze over them.
- Add coconut water to partially cover and simmer gently until the fish is tender and sauce thickens.
- Garnish with black pepper and chili before serving with rice.
