Char Kway Teow
Smoky stir-fried flat rice noodles with shrimp, egg, and bean sprouts.
Ingredients
- 300g flat rice noodles
- 150g shrimp
- 2 eggs
- 1 cup bean sprouts
- 2 tbsp dark soy sauce
- 1 tbsp chili paste
- 2 Chinese sausages, sliced
- Chives
Steps
- Heat a wok very hot with oil and stir-fry shrimp and sausage briefly.
- Push aside and crack in eggs, scrambling lightly.
- Add noodles, dark soy sauce, and chili paste, tossing over high heat until smoky and well coated.
- Add bean sprouts and chives, stir-frying briefly to retain crunch.
- Serve immediately while hot.
