Chicken Adobo
The Filipino national dish of chicken braised in soy sauce, vinegar, and garlic.
Ingredients
- 800g chicken thighs
- 1/3 cup soy sauce
- 1/3 cup vinegar
- 6 cloves garlic, smashed
- 2 bay leaves
- 1 tsp whole peppercorns
- 1 tbsp sugar
Steps
- Combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns in a pot; marinate for 20 minutes.
- Bring to a boil without stirring, then reduce to a simmer.
- Cook covered for 25-30 minutes until chicken is tender.
- Uncover and simmer further to reduce and thicken the sauce.
- Stir in sugar to balance the flavors.
- Serve hot with steamed rice.
