Chicken Adobo

The Filipino national dish of chicken braised in soy sauce, vinegar, and garlic.

Ingredients

  • 800g chicken thighs
  • 1/3 cup soy sauce
  • 1/3 cup vinegar
  • 6 cloves garlic, smashed
  • 2 bay leaves
  • 1 tsp whole peppercorns
  • 1 tbsp sugar

Steps

  1. Combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns in a pot; marinate for 20 minutes.
  2. Bring to a boil without stirring, then reduce to a simmer.
  3. Cook covered for 25-30 minutes until chicken is tender.
  4. Uncover and simmer further to reduce and thicken the sauce.
  5. Stir in sugar to balance the flavors.
  6. Serve hot with steamed rice.
