Classic Chicken Curry
A comforting, aromatic curry perfect for a weeknight dinner.
Ingredients
- 500g chicken thighs, cut into pieces
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp ginger paste
- 2 tomatoes, pureed
- 2 tbsp curry powder
- 1 cup coconut milk
- Salt to taste
- 2 tbsp oil
Steps
- Heat oil and saute onions until golden.
- Add garlic and ginger, cook for a minute.
- Stir in curry powder and cook until fragrant.
- Add tomato puree and cook until oil separates.
- Add chicken pieces and cook until sealed.
- Pour in coconut milk and simmer for 20 minutes until chicken is cooked through.
- Serve hot with rice.
