Classic Chicken Curry

A comforting, aromatic curry perfect for a weeknight dinner.

Ingredients

  • 500g chicken thighs, cut into pieces
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger paste
  • 2 tomatoes, pureed
  • 2 tbsp curry powder
  • 1 cup coconut milk
  • Salt to taste
  • 2 tbsp oil

Steps

  1. Heat oil and saute onions until golden.
  2. Add garlic and ginger, cook for a minute.
  3. Stir in curry powder and cook until fragrant.
  4. Add tomato puree and cook until oil separates.
  5. Add chicken pieces and cook until sealed.
  6. Pour in coconut milk and simmer for 20 minutes until chicken is cooked through.
  7. Serve hot with rice.
