Dorayaki

Two fluffy pancakes sandwiching sweet red bean paste, a beloved Japanese treat.

Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 2 tbsp honey
  • 1 cup sweet red bean paste

Steps

  1. Whisk eggs and sugar until pale, then mix in honey.
  2. Fold in flour and baking powder to form a smooth batter; rest for 15 minutes.
  3. Cook small rounds of batter on a non-stick pan over low heat until golden on both sides.
  4. Sandwich a generous spoonful of red bean paste between two pancakes.
  5. Serve at room temperature.
