Dorayaki
Two fluffy pancakes sandwiching sweet red bean paste, a beloved Japanese treat.
Ingredients
- 2 eggs
- 1/2 cup sugar
- 1 cup flour
- 1 tsp baking powder
- 2 tbsp honey
- 1 cup sweet red bean paste
Steps
- Whisk eggs and sugar until pale, then mix in honey.
- Fold in flour and baking powder to form a smooth batter; rest for 15 minutes.
- Cook small rounds of batter on a non-stick pan over low heat until golden on both sides.
- Sandwich a generous spoonful of red bean paste between two pancakes.
- Serve at room temperature.
