Egg Fried Rice

A classic Chinese fried rice with fluffy egg, scallions, and day-old rice.

Ingredients

  • 3 cups cold cooked rice
  • 3 eggs, beaten
  • 3 scallions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 3 tbsp vegetable oil
  • Salt and white pepper

Steps

  1. Heat 1 tbsp oil in a wok and scramble the eggs until just set; set aside.
  2. Heat remaining oil and stir-fry rice, breaking up clumps.
  3. Return eggs to the wok and add soy sauce, oyster sauce, and scallions.
  4. Toss everything together over high heat for 2 minutes.
  5. Season with salt and white pepper and serve hot.
