Egg Fried Rice
A classic Chinese fried rice with fluffy egg, scallions, and day-old rice.
Ingredients
- 3 cups cold cooked rice
- 3 eggs, beaten
- 3 scallions, chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 3 tbsp vegetable oil
- Salt and white pepper
Steps
- Heat 1 tbsp oil in a wok and scramble the eggs until just set; set aside.
- Heat remaining oil and stir-fry rice, breaking up clumps.
- Return eggs to the wok and add soy sauce, oyster sauce, and scallions.
- Toss everything together over high heat for 2 minutes.
- Season with salt and white pepper and serve hot.
