Goi Cuon

Fresh Vietnamese spring rolls with shrimp, herbs, and vermicelli wrapped in rice paper.

Ingredients

  • Rice paper wrappers
  • 200g shrimp, cooked and halved
  • 100g rice vermicelli, cooked
  • Lettuce, mint, and cilantro
  • Peanut hoisin dipping sauce

Steps

  1. Soften a rice paper wrapper briefly in warm water.
  2. Layer lettuce, vermicelli, herbs, and shrimp near one edge.
  3. Roll tightly, folding in the sides as you go.
  4. Repeat with remaining ingredients.
  5. Serve fresh with peanut hoisin dipping sauce.
