Fresh Vietnamese spring rolls with shrimp, herbs, and vermicelli wrapped in rice paper.
Ingredients
- Rice paper wrappers
- 200g shrimp, cooked and halved
- 100g rice vermicelli, cooked
- Lettuce, mint, and cilantro
- Peanut hoisin dipping sauce
Steps
- Soften a rice paper wrapper briefly in warm water.
- Layer lettuce, vermicelli, herbs, and shrimp near one edge.
- Roll tightly, folding in the sides as you go.
- Repeat with remaining ingredients.
- Serve fresh with peanut hoisin dipping sauce.
