Gyudon

A quick, savory beef and onion rice bowl simmered in sweet soy sauce.

Ingredients

  • 300g thinly sliced beef
  • 1 onion, sliced
  • 1 cup dashi stock
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp sugar
  • 2 bowls steamed rice

Steps

  1. Simmer dashi, soy sauce, mirin, and sugar with onion until softened.
  2. Add beef slices and simmer until just cooked, skimming any foam.
  3. Let the beef absorb the sauce for a few minutes over low heat.
  4. Spoon the beef, onion, and sauce over bowls of steamed rice.
  5. Serve hot, optionally topped with a raw or soft egg.
