Hainanese Chicken Rice

Tender poached chicken served with fragrant rice cooked in chicken fat and stock.

Ingredients

  • 1 whole chicken
  • 2 cups rice
  • 3 cloves garlic, minced
  • 1 piece ginger, sliced
  • Chicken stock
  • Chili ginger sauce and dark soy sauce
  • Cucumber slices

Steps

  1. Poach the whole chicken gently in simmering water with ginger until just cooked through; reserve the stock.
  2. Fry garlic and ginger in chicken fat, then stir-fry rice briefly before cooking it in the reserved stock.
  3. Chill the poached chicken briefly, then chop into pieces.
  4. Serve chicken over or alongside the fragrant rice with cucumber slices.
  5. Accompany with chili ginger sauce and dark soy sauce for dipping.
