Hainanese Chicken Rice
Tender poached chicken served with fragrant rice cooked in chicken fat and stock.
Ingredients
- 1 whole chicken
- 2 cups rice
- 3 cloves garlic, minced
- 1 piece ginger, sliced
- Chicken stock
- Chili ginger sauce and dark soy sauce
- Cucumber slices
Steps
- Poach the whole chicken gently in simmering water with ginger until just cooked through; reserve the stock.
- Fry garlic and ginger in chicken fat, then stir-fry rice briefly before cooking it in the reserved stock.
- Chill the poached chicken briefly, then chop into pieces.
- Serve chicken over or alongside the fragrant rice with cucumber slices.
- Accompany with chili ginger sauce and dark soy sauce for dipping.
