Kare-Kare

A rich Filipino oxtail stew in a thick peanut sauce, served with shrimp paste.

Ingredients

  • 800g oxtail
  • 1/2 cup ground peanuts or peanut butter
  • 2 tbsp toasted rice powder
  • 1 banana flower or eggplant
  • String beans
  • Shrimp paste (bagoong) for serving

Steps

  1. Simmer oxtail in water until very tender, about 2 hours.
  2. Stir in ground peanuts and toasted rice powder to thicken the broth.
  3. Add vegetables and simmer until tender.
  4. Adjust thickness and seasoning of the sauce as needed.
  5. Serve hot with steamed rice and a side of shrimp paste.
