Kare-Kare
A rich Filipino oxtail stew in a thick peanut sauce, served with shrimp paste.
Ingredients
- 800g oxtail
- 1/2 cup ground peanuts or peanut butter
- 2 tbsp toasted rice powder
- 1 banana flower or eggplant
- String beans
- Shrimp paste (bagoong) for serving
Steps
- Simmer oxtail in water until very tender, about 2 hours.
- Stir in ground peanuts and toasted rice powder to thicken the broth.
- Add vegetables and simmer until tender.
- Adjust thickness and seasoning of the sauce as needed.
- Serve hot with steamed rice and a side of shrimp paste.
