Khao Soi

Khao Soi

A Northern Thai curry noodle soup topped with crispy fried noodles.

Ingredients

  • 300g egg noodles
  • 300g chicken thigh
  • 3 tbsp red curry paste
  • 2 cups coconut milk
  • 1 cup stock
  • 2 tbsp fish sauce
  • Pickled mustard greens, shallots, lime

Steps

  1. Fry curry paste in coconut cream until fragrant, then add chicken and brown lightly.
  2. Pour in remaining coconut milk and stock, simmering until chicken is cooked through.
  3. Season with fish sauce.
  4. Boil fresh noodles for serving, and fry a small portion until crispy for topping.
  5. Ladle curry over noodles and top with crispy noodles, pickled greens, shallots, and lime.
