Khao Soi
A Northern Thai curry noodle soup topped with crispy fried noodles.
Ingredients
- 300g egg noodles
- 300g chicken thigh
- 3 tbsp red curry paste
- 2 cups coconut milk
- 1 cup stock
- 2 tbsp fish sauce
- Pickled mustard greens, shallots, lime
Steps
- Fry curry paste in coconut cream until fragrant, then add chicken and brown lightly.
- Pour in remaining coconut milk and stock, simmering until chicken is cooked through.
- Season with fish sauce.
- Boil fresh noodles for serving, and fry a small portion until crispy for topping.
- Ladle curry over noodles and top with crispy noodles, pickled greens, shallots, and lime.
