Kheer
A creamy Indian rice pudding flavored with cardamom, saffron, and nuts.
Ingredients
- 1/2 cup basmati rice
- 4 cups milk
- 1/2 cup sugar
- 4 cardamom pods
- A pinch of saffron
- Chopped almonds and pistachios
Steps
- Rinse rice and simmer in milk over low heat, stirring frequently, until rice is soft and milk thickens.
- Add sugar, cardamom, and saffron, continuing to simmer until creamy.
- Stir in chopped nuts, reserving some for garnish.
- Cool slightly or chill before serving.
- Garnish with remaining nuts.
