Kheer

A creamy Indian rice pudding flavored with cardamom, saffron, and nuts.

Ingredients

  • 1/2 cup basmati rice
  • 4 cups milk
  • 1/2 cup sugar
  • 4 cardamom pods
  • A pinch of saffron
  • Chopped almonds and pistachios

Steps

  1. Rinse rice and simmer in milk over low heat, stirring frequently, until rice is soft and milk thickens.
  2. Add sugar, cardamom, and saffron, continuing to simmer until creamy.
  3. Stir in chopped nuts, reserving some for garnish.
  4. Cool slightly or chill before serving.
  5. Garnish with remaining nuts.
