Kimchi Fried Rice

Kimchi Fried Rice

A spicy, tangy fried rice made with well-fermented kimchi and gochujang.

Ingredients

  • 3 cups cold cooked rice
  • 1.5 cups chopped kimchi
  • 2 tbsp kimchi juice
  • 1 tbsp gochujang
  • 2 eggs
  • 2 scallions, chopped
  • Sesame oil

Steps

  1. Stir-fry kimchi in sesame oil until slightly caramelized.
  2. Add rice, kimchi juice, and gochujang, breaking up clumps as you mix.
  3. Fry until rice is heated through and slightly crisp in spots.
  4. Fry eggs separately and place one on top of each bowl.
  5. Garnish with scallions and a drizzle of sesame oil.
