Kimchi Fried Rice
A spicy, tangy fried rice made with well-fermented kimchi and gochujang.
Ingredients
- 3 cups cold cooked rice
- 1.5 cups chopped kimchi
- 2 tbsp kimchi juice
- 1 tbsp gochujang
- 2 eggs
- 2 scallions, chopped
- Sesame oil
Steps
- Stir-fry kimchi in sesame oil until slightly caramelized.
- Add rice, kimchi juice, and gochujang, breaking up clumps as you mix.
- Fry until rice is heated through and slightly crisp in spots.
- Fry eggs separately and place one on top of each bowl.
- Garnish with scallions and a drizzle of sesame oil.
