Kung Pao Chicken

Diced chicken stir-fried with peanuts, dried chilies, and a sweet-savory sauce.

Ingredients

  • 400g chicken breast, diced
  • 1/2 cup roasted peanuts
  • 6 dried red chilies
  • 2 tbsp soy sauce
  • 1 tbsp Chinkiang vinegar
  • 1 tbsp sugar
  • 2 cloves garlic, sliced
  • 1 tsp Sichuan peppercorns

Steps

  1. Marinate chicken briefly in a little soy sauce and cornstarch.
  2. Stir-fry dried chilies and Sichuan peppercorns in oil until fragrant.
  3. Add chicken and stir-fry until cooked through.
  4. Add garlic, soy sauce, vinegar, and sugar, tossing to coat.
  5. Stir in peanuts and serve hot with rice.
