Kung Pao Chicken
Diced chicken stir-fried with peanuts, dried chilies, and a sweet-savory sauce.
Ingredients
- 400g chicken breast, diced
- 1/2 cup roasted peanuts
- 6 dried red chilies
- 2 tbsp soy sauce
- 1 tbsp Chinkiang vinegar
- 1 tbsp sugar
- 2 cloves garlic, sliced
- 1 tsp Sichuan peppercorns
Steps
- Marinate chicken briefly in a little soy sauce and cornstarch.
- Stir-fry dried chilies and Sichuan peppercorns in oil until fragrant.
- Add chicken and stir-fry until cooked through.
- Add garlic, soy sauce, vinegar, and sugar, tossing to coat.
- Stir in peanuts and serve hot with rice.
