Laksa
A rich, spicy coconut noodle soup layered with shrimp, tofu, and fragrant herbs.
Ingredients
- 300g thick rice noodles
- 300g shrimp
- 3 tbsp laksa spice paste
- 2 cups coconut milk
- 2 cups stock
- Fried tofu puffs
- Bean sprouts, mint, and lime
Steps
- Fry laksa paste in oil until fragrant and aromatic.
- Add stock and coconut milk, bringing to a gentle simmer.
- Add shrimp and tofu puffs, cooking until shrimp turns pink.
- Blanch noodles separately and place in bowls.
- Ladle the hot laksa broth and toppings over the noodles, garnishing with bean sprouts, mint, and lime.
