Laksa

A rich, spicy coconut noodle soup layered with shrimp, tofu, and fragrant herbs.

Ingredients

  • 300g thick rice noodles
  • 300g shrimp
  • 3 tbsp laksa spice paste
  • 2 cups coconut milk
  • 2 cups stock
  • Fried tofu puffs
  • Bean sprouts, mint, and lime

Steps

  1. Fry laksa paste in oil until fragrant and aromatic.
  2. Add stock and coconut milk, bringing to a gentle simmer.
  3. Add shrimp and tofu puffs, cooking until shrimp turns pink.
  4. Blanch noodles separately and place in bowls.
  5. Ladle the hot laksa broth and toppings over the noodles, garnishing with bean sprouts, mint, and lime.
