Larb Gai

A zesty Northern Thai minced chicken salad with herbs, lime, and toasted rice powder.

Ingredients

  • 300g minced chicken
  • 2 tbsp toasted rice powder
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp chili flakes
  • Mint and cilantro leaves
  • Shallots, sliced

Steps

  1. Cook minced chicken in a dry pan with a splash of water until just done.
  2. Remove from heat and toss with lime juice, fish sauce, and chili flakes while warm.
  3. Stir in toasted rice powder and sliced shallots.
  4. Fold in mint and cilantro leaves just before serving.
  5. Serve with sticky rice and fresh cabbage leaves.
