Leche Flan
A silky Filipino steamed caramel custard made with egg yolks and condensed milk.
Ingredients
- 8 egg yolks
- 1 can condensed milk
- 1 can evaporated milk
- 1 tsp vanilla extract
- 1 cup sugar, caramelized
Steps
- Pour caramelized sugar into the bottom of a mold (llanera) and let it set.
- Whisk egg yolks gently with condensed milk, evaporated milk, and vanilla, avoiding bubbles.
- Strain the mixture and pour over the caramel.
- Cover and steam gently for 30-40 minutes until set.
- Chill thoroughly, then invert onto a plate to serve.
