Leche Flan

Leche Flan

A silky Filipino steamed caramel custard made with egg yolks and condensed milk.

Ingredients

  • 8 egg yolks
  • 1 can condensed milk
  • 1 can evaporated milk
  • 1 tsp vanilla extract
  • 1 cup sugar, caramelized

Steps

  1. Pour caramelized sugar into the bottom of a mold (llanera) and let it set.
  2. Whisk egg yolks gently with condensed milk, evaporated milk, and vanilla, avoiding bubbles.
  3. Strain the mixture and pour over the caramel.
  4. Cover and steam gently for 30-40 minutes until set.
  5. Chill thoroughly, then invert onto a plate to serve.
