Mango Sticky Rice

Mango Sticky Rice

A beloved Thai dessert of sweet coconut sticky rice with fresh ripe mango.

Ingredients

  • 1 cup glutinous rice, soaked
  • 1 cup coconut milk
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 2 ripe mangoes, sliced
  • 1 tbsp toasted sesame seeds

Steps

  1. Steam soaked glutinous rice until tender and translucent.
  2. Warm coconut milk with sugar and salt until dissolved; reserve a little for topping.
  3. Pour most of the coconut milk over the hot rice and let it absorb for 15 minutes.
  4. Plate the rice alongside sliced mango.
  5. Drizzle with reserved coconut milk and sprinkle with sesame seeds.
