Mapo Tofu
Silken tofu and minced beef simmered in a numbing, spicy Sichuan sauce.
Ingredients
- 1 block soft tofu, cubed
- 150g ground beef or pork
- 2 tbsp doubanjiang (chili bean paste)
- 1 tbsp fermented black beans
- 1 tsp Sichuan peppercorn, ground
- 2 cloves garlic, minced
- 1 cup stock
- Cornstarch slurry
Steps
- Brown the ground meat in oil until cooked through.
- Add doubanjiang, black beans, and garlic, stirring until fragrant.
- Pour in stock and bring to a simmer.
- Gently add tofu cubes and simmer for 5 minutes without stirring too hard.
- Thicken with cornstarch slurry and finish with ground Sichuan peppercorn.
- Serve hot over steamed rice.
