Mapo Tofu

Mapo Tofu

Silken tofu and minced beef simmered in a numbing, spicy Sichuan sauce.

Ingredients

  • 1 block soft tofu, cubed
  • 150g ground beef or pork
  • 2 tbsp doubanjiang (chili bean paste)
  • 1 tbsp fermented black beans
  • 1 tsp Sichuan peppercorn, ground
  • 2 cloves garlic, minced
  • 1 cup stock
  • Cornstarch slurry

Steps

  1. Brown the ground meat in oil until cooked through.
  2. Add doubanjiang, black beans, and garlic, stirring until fragrant.
  3. Pour in stock and bring to a simmer.
  4. Gently add tofu cubes and simmer for 5 minutes without stirring too hard.
  5. Thicken with cornstarch slurry and finish with ground Sichuan peppercorn.
  6. Serve hot over steamed rice.
