Massaman Curry
A rich, mildly spiced Thai-Muslim curry with beef, potatoes, and peanuts.
Ingredients
- 500g beef chuck, cubed
- 3 tbsp massaman curry paste
- 2 cups coconut milk
- 2 potatoes, chunked
- 1 onion, chunked
- 1/4 cup roasted peanuts
- 2 tbsp fish sauce
- 1 tbsp palm sugar
Steps
- Fry massaman curry paste in coconut cream until fragrant.
- Add beef and brown lightly.
- Pour in remaining coconut milk and simmer gently until beef is tender, about 1.5 hours.
- Add potatoes, onion, and peanuts, simmering until vegetables are soft.
- Season with fish sauce and palm sugar.
- Serve hot with steamed rice.
