Massaman Curry

Massaman Curry

A rich, mildly spiced Thai-Muslim curry with beef, potatoes, and peanuts.

Ingredients

  • 500g beef chuck, cubed
  • 3 tbsp massaman curry paste
  • 2 cups coconut milk
  • 2 potatoes, chunked
  • 1 onion, chunked
  • 1/4 cup roasted peanuts
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar

Steps

  1. Fry massaman curry paste in coconut cream until fragrant.
  2. Add beef and brown lightly.
  3. Pour in remaining coconut milk and simmer gently until beef is tender, about 1.5 hours.
  4. Add potatoes, onion, and peanuts, simmering until vegetables are soft.
  5. Season with fish sauce and palm sugar.
  6. Serve hot with steamed rice.
