Mee Goreng

Spicy Malaysian fried noodles with a tangy tomato and chili kick.

Ingredients

  • 300g yellow egg noodles
  • 150g shrimp or chicken
  • 2 tbsp chili paste
  • 2 tbsp ketchup
  • 1 egg
  • 1 cup bean sprouts
  • Fried shallots and lime

Steps

  1. Stir-fry chili paste in oil until fragrant.
  2. Add shrimp or chicken and cook through.
  3. Add noodles and ketchup, tossing to coat evenly.
  4. Push noodles aside, crack in egg, and scramble before mixing through.
  5. Add bean sprouts and toss briefly.
  6. Serve topped with fried shallots and a squeeze of lime.
