Mochi

Mochi

Soft, chewy Japanese rice cakes, often filled with sweet red bean paste.

Ingredients

  • 1 cup glutinous rice flour (mochiko)
  • 3/4 cup water
  • 1/4 cup sugar
  • 1/2 cup sweet red bean paste
  • Potato starch for dusting

Steps

  1. Mix mochiko, water, and sugar into a smooth batter.
  2. Microwave or steam the batter, stirring every minute, until thick and translucent.
  3. Dust a work surface with potato starch and turn out the hot mochi dough.
  4. Divide into pieces, flatten, and wrap each around a ball of red bean paste.
  5. Seal and shape into smooth rounds, dusting off excess starch.
