Mochi
Soft, chewy Japanese rice cakes, often filled with sweet red bean paste.
Ingredients
- 1 cup glutinous rice flour (mochiko)
- 3/4 cup water
- 1/4 cup sugar
- 1/2 cup sweet red bean paste
- Potato starch for dusting
Steps
- Mix mochiko, water, and sugar into a smooth batter.
- Microwave or steam the batter, stirring every minute, until thick and translucent.
- Dust a work surface with potato starch and turn out the hot mochi dough.
- Divide into pieces, flatten, and wrap each around a ball of red bean paste.
- Seal and shape into smooth rounds, dusting off excess starch.
