Oyakodon

Oyakodon

A comforting rice bowl of simmered chicken and egg in sweet soy dashi.

Ingredients

  • 200g chicken thigh, sliced
  • 3 eggs, lightly beaten
  • 1/2 onion, sliced
  • 1/2 cup dashi stock
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 2 bowls steamed rice

Steps

  1. Simmer dashi, soy sauce, mirin, and sugar with onion until softened.
  2. Add chicken and cook until no longer pink.
  3. Pour beaten eggs evenly over the chicken and let them set partially, keeping it slightly runny.
  4. Slide the chicken and egg mixture over bowls of steamed rice.
  5. Garnish with scallions if desired and serve immediately.
