Oyakodon
A comforting rice bowl of simmered chicken and egg in sweet soy dashi.
Ingredients
- 200g chicken thigh, sliced
- 3 eggs, lightly beaten
- 1/2 onion, sliced
- 1/2 cup dashi stock
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- 2 bowls steamed rice
Steps
- Simmer dashi, soy sauce, mirin, and sugar with onion until softened.
- Add chicken and cook until no longer pink.
- Pour beaten eggs evenly over the chicken and let them set partially, keeping it slightly runny.
- Slide the chicken and egg mixture over bowls of steamed rice.
- Garnish with scallions if desired and serve immediately.
