Pad Thai

Thailand's favorite stir-fried rice noodles with shrimp, tofu, peanuts, and tamarind sauce.

Ingredients

  • 200g rice noodles, soaked
  • 150g shrimp, peeled
  • 100g firm tofu, cubed
  • 2 eggs
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • Bean sprouts and crushed peanuts

Steps

  1. Soak noodles until pliable but firm; drain.
  2. Stir-fry shrimp and tofu in oil until shrimp turns pink.
  3. Push aside, scramble eggs in the same pan, then mix together.
  4. Add noodles along with tamarind paste, fish sauce, and palm sugar, tossing to combine.
  5. Add bean sprouts and stir-fry briefly.
  6. Serve topped with crushed peanuts and a wedge of lime.
