Pad Thai
Thailand's favorite stir-fried rice noodles with shrimp, tofu, peanuts, and tamarind sauce.
Ingredients
- 200g rice noodles, soaked
- 150g shrimp, peeled
- 100g firm tofu, cubed
- 2 eggs
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 2 tbsp palm sugar
- Bean sprouts and crushed peanuts
Steps
- Soak noodles until pliable but firm; drain.
- Stir-fry shrimp and tofu in oil until shrimp turns pink.
- Push aside, scramble eggs in the same pan, then mix together.
- Add noodles along with tamarind paste, fish sauce, and palm sugar, tossing to combine.
- Add bean sprouts and stir-fry briefly.
- Serve topped with crushed peanuts and a wedge of lime.
