Pho Bo
Vietnam's iconic beef noodle soup with a fragrant, slow-simmered broth.
Ingredients
- 300g rice noodles
- 500g beef bones
- 200g beef sirloin, thinly sliced
- 1 onion, charred
- 1 piece ginger, charred
- 2 star anise
- 1 cinnamon stick
- Fish sauce, herbs, lime
Steps
- Simmer beef bones with charred onion, ginger, star anise, and cinnamon for several hours, skimming occasionally.
- Strain the broth and season with fish sauce.
- Blanch rice noodles in hot water until soft.
- Place noodles and raw beef slices in a bowl, then pour boiling broth over to cook the beef.
- Serve with bean sprouts, herbs, lime, and chili.
