Pho Bo

Vietnam's iconic beef noodle soup with a fragrant, slow-simmered broth.

Ingredients

  • 300g rice noodles
  • 500g beef bones
  • 200g beef sirloin, thinly sliced
  • 1 onion, charred
  • 1 piece ginger, charred
  • 2 star anise
  • 1 cinnamon stick
  • Fish sauce, herbs, lime

Steps

  1. Simmer beef bones with charred onion, ginger, star anise, and cinnamon for several hours, skimming occasionally.
  2. Strain the broth and season with fish sauce.
  3. Blanch rice noodles in hot water until soft.
  4. Place noodles and raw beef slices in a bowl, then pour boiling broth over to cook the beef.
  5. Serve with bean sprouts, herbs, lime, and chili.
