Sinigang na Baboy
A comforting Filipino sour pork soup flavored with tamarind and vegetables.
Ingredients
- 500g pork ribs
- 6 cups water
- 2 tbsp tamarind soup base or fresh tamarind
- 1 radish, sliced
- 1 eggplant, sliced
- String beans
- Kangkong or spinach
- Fish sauce
Steps
- Boil pork ribs in water until tender, skimming any scum.
- Stir in tamarind base or fresh tamarind pulp to create a sour broth.
- Add radish and eggplant, simmering until softened.
- Add string beans and kangkong, cooking just until tender.
- Season with fish sauce to taste and serve hot with rice.
