Sinigang na Baboy

A comforting Filipino sour pork soup flavored with tamarind and vegetables.

Ingredients

  • 500g pork ribs
  • 6 cups water
  • 2 tbsp tamarind soup base or fresh tamarind
  • 1 radish, sliced
  • 1 eggplant, sliced
  • String beans
  • Kangkong or spinach
  • Fish sauce

Steps

  1. Boil pork ribs in water until tender, skimming any scum.
  2. Stir in tamarind base or fresh tamarind pulp to create a sour broth.
  3. Add radish and eggplant, simmering until softened.
  4. Add string beans and kangkong, cooking just until tender.
  5. Season with fish sauce to taste and serve hot with rice.
