Sisig

A sizzling Filipino dish of chopped pork face and ears with calamansi and chili.

Ingredients

  • 500g pork face and ears, boiled and grilled
  • 1 onion, chopped
  • 3 chilies, chopped
  • 3 tbsp calamansi or lime juice
  • 2 tbsp soy sauce
  • Mayonnaise (optional)
  • Butter

Steps

  1. Boil pork until tender, then grill until charred and crispy.
  2. Chop the grilled pork finely.
  3. Saute chopped pork in butter with onion and chilies.
  4. Season with soy sauce and calamansi juice.
  5. Serve sizzling hot on a hot plate, optionally topped with a swirl of mayonnaise and a raw egg.
