Soto Ayam
A fragrant Indonesian turmeric chicken soup with vermicelli and boiled egg.
Ingredients
- 500g chicken, bone-in
- 6 cups water
- 2 tbsp turmeric paste
- 2 cloves garlic, 2 candlenuts
- Vermicelli noodles
- Hard-boiled eggs and lime
Steps
- Simmer chicken in water with turmeric paste, garlic, and candlenuts until cooked through.
- Remove chicken, shred the meat, and strain the broth.
- Return broth to a simmer and season with salt to taste.
- Place vermicelli, shredded chicken, and a halved boiled egg in bowls.
- Pour hot broth over and serve with a squeeze of lime and chili sambal.
