Soto Ayam

A fragrant Indonesian turmeric chicken soup with vermicelli and boiled egg.

Ingredients

  • 500g chicken, bone-in
  • 6 cups water
  • 2 tbsp turmeric paste
  • 2 cloves garlic, 2 candlenuts
  • Vermicelli noodles
  • Hard-boiled eggs and lime

Steps

  1. Simmer chicken in water with turmeric paste, garlic, and candlenuts until cooked through.
  2. Remove chicken, shred the meat, and strain the broth.
  3. Return broth to a simmer and season with salt to taste.
  4. Place vermicelli, shredded chicken, and a halved boiled egg in bowls.
  5. Pour hot broth over and serve with a squeeze of lime and chili sambal.
