Spaghetti Aglio e Olio

A simple Italian pasta dish with garlic, olive oil, and chili flakes.

Ingredients

  • 400g spaghetti
  • 6 cloves garlic, thinly sliced
  • 1/2 cup olive oil
  • 1 tsp red chili flakes
  • Fresh parsley, chopped
  • Salt to taste
  • Grated parmesan (optional)

Steps

  1. Cook spaghetti in salted boiling water until al dente; reserve 1/2 cup pasta water.
  2. Heat olive oil in a pan over low heat and gently fry garlic until golden.
  3. Add chili flakes and a splash of pasta water.
  4. Toss in the cooked spaghetti and mix well.
  5. Garnish with parsley and parmesan before serving.
