Sundubu Jjigae
A bubbling hot soft tofu stew, spicy and savory with seafood or pork.
Ingredients
- 1 tube soft (silken) tofu
- 100g pork or clams
- 1 tbsp gochugaru (chili flakes)
- 1 tbsp gochujang
- 2 cups anchovy or pork stock
- 1 egg
- Scallions, chopped
Steps
- Saute pork or clams briefly with gochugaru and gochujang.
- Add stock and bring to a boil.
- Gently spoon in the soft tofu without breaking it up too much.
- Crack an egg into the simmering stew just before serving.
- Garnish with scallions and serve bubbling hot with rice.
