Sundubu Jjigae

Sundubu Jjigae

A bubbling hot soft tofu stew, spicy and savory with seafood or pork.

Ingredients

  • 1 tube soft (silken) tofu
  • 100g pork or clams
  • 1 tbsp gochugaru (chili flakes)
  • 1 tbsp gochujang
  • 2 cups anchovy or pork stock
  • 1 egg
  • Scallions, chopped

Steps

  1. Saute pork or clams briefly with gochugaru and gochujang.
  2. Add stock and bring to a boil.
  3. Gently spoon in the soft tofu without breaking it up too much.
  4. Crack an egg into the simmering stew just before serving.
  5. Garnish with scallions and serve bubbling hot with rice.
