Tamagoyaki

Tamagoyaki

A rolled Japanese omelette, lightly sweetened and savory, sliced for breakfast.

Ingredients

  • 4 eggs
  • 1 tbsp sugar
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1/4 cup dashi stock
  • Vegetable oil

Steps

  1. Whisk eggs with sugar, soy sauce, mirin, and dashi.
  2. Heat a rectangular tamagoyaki pan with a thin layer of oil over medium heat.
  3. Pour in a thin layer of egg mixture, and once set, roll it to one side.
  4. Add more egg mixture, lifting the rolled portion to let egg flow underneath, then roll again.
  5. Repeat until all egg is used, forming a multi-layered roll.
  6. Slice and serve.
