Tempura
Light and crispy battered, deep-fried shrimp and vegetables.
Ingredients
- 8 shrimp, peeled with tails on
- 1 sweet potato, sliced
- 1 cup cold water
- 1 cup flour
- 1 egg
- Oil for deep frying
- Tentsuyu dipping sauce
Steps
- Whisk egg into cold water, then gently fold in flour, keeping the batter lumpy and cold.
- Dip shrimp and vegetable slices into the batter.
- Deep fry in oil at 180C until light golden and crisp.
- Drain on a rack to keep the coating crisp.
- Serve immediately with tentsuyu dipping sauce.
