Tempura

Light and crispy battered, deep-fried shrimp and vegetables.

Ingredients

  • 8 shrimp, peeled with tails on
  • 1 sweet potato, sliced
  • 1 cup cold water
  • 1 cup flour
  • 1 egg
  • Oil for deep frying
  • Tentsuyu dipping sauce

Steps

  1. Whisk egg into cold water, then gently fold in flour, keeping the batter lumpy and cold.
  2. Dip shrimp and vegetable slices into the batter.
  3. Deep fry in oil at 180C until light golden and crisp.
  4. Drain on a rack to keep the coating crisp.
  5. Serve immediately with tentsuyu dipping sauce.
