Tom Yum Goong
A hot and sour Thai shrimp soup fragrant with lemongrass, galangal, and lime.
Ingredients
- 300g shrimp, shell on
- 4 cups stock
- 2 stalks lemongrass, smashed
- 3 slices galangal
- 4 kaffir lime leaves
- 3 Thai chilies, smashed
- 3 tbsp fish sauce
- 3 tbsp lime juice
- Mushrooms
Steps
- Bring stock to a boil with lemongrass, galangal, and kaffir lime leaves.
- Add mushrooms and shrimp, simmering until shrimp turns pink.
- Stir in smashed chilies, fish sauce, and lime juice.
- Taste and adjust for a balance of sour, salty, and spicy.
- Garnish with cilantro and serve hot.
