Tom Yum Goong

A hot and sour Thai shrimp soup fragrant with lemongrass, galangal, and lime.

Ingredients

  • 300g shrimp, shell on
  • 4 cups stock
  • 2 stalks lemongrass, smashed
  • 3 slices galangal
  • 4 kaffir lime leaves
  • 3 Thai chilies, smashed
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • Mushrooms

Steps

  1. Bring stock to a boil with lemongrass, galangal, and kaffir lime leaves.
  2. Add mushrooms and shrimp, simmering until shrimp turns pink.
  3. Stir in smashed chilies, fish sauce, and lime juice.
  4. Taste and adjust for a balance of sour, salty, and spicy.
  5. Garnish with cilantro and serve hot.
