Yakitori

Grilled skewered chicken glazed with a sweet and savory tare sauce.

Ingredients

  • 500g chicken thigh, cubed
  • 4 scallions, cut into segments
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp sake
  • 2 tbsp sugar
  • Bamboo skewers

Steps

  1. Thread chicken and scallion pieces alternately onto skewers.
  2. Simmer soy sauce, mirin, sake, and sugar until slightly thickened to make the tare glaze.
  3. Grill skewers over high heat, turning occasionally.
  4. Brush with tare glaze repeatedly during the last few minutes of grilling.
  5. Serve hot, brushed with extra glaze.
