Youtiao

Crispy Chinese fried dough sticks, the classic breakfast pairing for congee or soy milk.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup warm water
  • 1 tbsp vegetable oil
  • Oil for deep frying

Steps

  1. Mix flour, baking powder, baking soda, and salt.
  2. Add water and oil, knead into a smooth, slightly sticky dough.
  3. Cover and rest for 1 hour.
  4. Stretch dough into strips, pair two strips and press together lengthwise.
  5. Deep fry at 190C, turning often, until golden and puffed.
  6. Drain and serve hot.
