Zaru Soba
Chilled buckwheat noodles served on a bamboo tray with a savory dipping sauce.
Ingredients
- 300g dried soba noodles
- 1 cup dashi stock
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- 2 scallions, chopped
- Wasabi and shredded nori
Steps
- Simmer dashi, soy sauce, mirin, and sugar to make the dipping sauce; chill.
- Cook soba noodles in boiling water until just tender.
- Rinse noodles under cold water until completely cooled and slightly slippery.
- Arrange noodles on a tray or plate with nori on top.
- Serve with chilled dipping sauce, scallions, and wasabi on the side.
