Zaru Soba

Zaru Soba

Chilled buckwheat noodles served on a bamboo tray with a savory dipping sauce.

Ingredients

  • 300g dried soba noodles
  • 1 cup dashi stock
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 2 scallions, chopped
  • Wasabi and shredded nori

Steps

  1. Simmer dashi, soy sauce, mirin, and sugar to make the dipping sauce; chill.
  2. Cook soba noodles in boiling water until just tender.
  3. Rinse noodles under cold water until completely cooled and slightly slippery.
  4. Arrange noodles on a tray or plate with nori on top.
  5. Serve with chilled dipping sauce, scallions, and wasabi on the side.
